GRILLED SHRIMP WITH GREMOLATA

INGREDIENTS:
+ 1 lemon
+ 1 (1-ounce) package parsley leaves
+ 2 large garlic cloves, minced
+ 1 pound medium shrimp, peeled and de-veined
+ 1 tablespoon Emeril’s Original Essence
+ Olive oil, for brushing


INSTRUCTIONS:
Using a paring knife or vegetable peeler remove the lemon peel in long strips. (Be careful not to peel off the white pith underneath the peel.) Mince the lemon peel. Mince the parsley leaves. In a small bowl combine the minced lemon peel, parsley, and garlic. Set aside. Combine the shrimp, Essence, and a few drizzles of olive oil in a mixing bowl and toss to combine. Thread the shrimp onto 4 skewers. (If using bamboo skewers, make sure they have been soaked in water for 30 minutes prior to using.) When the grill is hot, place the shrimp on the grill and cook for about 2 minutes on each side, or until just cooked through. Remove shrimp from skewers and place in a large bowl. Drizzle with olive oil and sprinkle shrimp with gremolata, tossing to coat.
